So day 4, I'm pretty proud of myself thusfar. it's not been easy making time to prep everything for the day.  and I have to make sure that I'm eating what's on the meal plan or am matching the calories and protein and whatnot so that I am eating well and not overeating.  Being vegan may be healthy, but it is still possibly to eat unhealthy and to overeat.  so for breakfast I had tofu scramble with some spinach, tomatoes, and mushrooms and I threw in a little soy, lemon juice and hot sauce : )
So i forgot to take a picture of my snack and my lunch..ooops!  but I had an apple and almonds for a snack and baby spinach with eggplant bacon for lunch.  It was raining today so I decided that I would switch my days and do total body today and cardio tomorrow.  I started doing the blogilates bikini bootcamp 3-abs and I was just not digging it : (  she was using paper plates as "gliders" and maybe my carpet just wasn't having it, but it was almost impossible for me to do some of these moves and some of them i just didn't feel like I was getting any benefit out of I did a different wbs workout.  I was pretty disappointed because I was hoping it would be as good as the #2 legs bootcamp.  but i will invest in some gliders and retry the workout..because I think my carpet may just be evil : P  So anyway, I got my workout in and had a protein shake and for dinner I had asparagus soup with a carrot and some grape tomatoes and hummus!

my problem is that I have to try to eat well, but I am still fighting hunger even though I eat every 2 hours.  it's not just because I don't have "the manly meat protein" in my diet(if you ever say that to me, consider yourself forever an idiot in my brain"you gotta have meat har har har"  stfu it's not going to kill you to not eat meat, cardiovascular disease however.......), it's a simple problem of having to keep my calories and whatnot in check.  sometimes I add to my meals a little, like extra veggies here and some fruit there, but instead of staying full longer, it seems that i just feel bloated    : (  I am well aware that abs are made in the gym and revealed in the kitchen, but man!  I just don't feel like I'm ever making progress in that area!  I think my genes are stoping me from being able to have those lower abs that would give me the finished product I'm wanting.  yea yea, "you're skinny, shutup"  but it's just like all those people who say, I don't care if I'm skinny because I'm comfortable with the way I look, well I'm not.  I know some of you are sitting there thinking that I have a huge body image issue, but the truth is I don't.  Think of it like a project, say a painting or refinishing a piece of want it to be perfect, and everything you had envisioned in your head.  To me, that project is my body.  I have a specific way i want it to look, and I'm getting so close! Please dont think I'm not proud of myself because I truely am! I have come really far!!  I was a bean pole in high school topping out at 115 pounds without even trying, and after my first year of college I was 150 pounds!! can you imagine and a year gaining all of that!  and the problem was that it was all in my middle area.  belly, thighs and ass...NO BUENO!  So for me to be back at my high school weight is huge for me!  and to have muscle definition, well it's amazing! yesterday I couldn't get over my sweet gunss : P and today I just kept showing my husband how rockin my quads were.  but I'm not quite there in some areas, so I just have to keep going and doing my best and hopefully i will get there soon! because I just ordered a bikini and i gotta rock that thing!  wow...rant much : P  have a good rest of the night everyone!

So day 3, my first day with the vegan challenge that I worked all day, which is actually good because it kept me from being bored and snacking away.  even if it was fruits and veggies, I'm sure I was snacking a little too much at home yesterday.  So anyway, my day did not start off fabulous.  My breakfast of protein pancakes was messed up for some reason.  They weren't cooking right and they seemed like almost geletin-ey like in the middle. 
It didn't seem like they were edible so I just threw them out and had half a banana and some blackberries for breakfast.  anyway, for my snack I had half a grapefruit with some stevia and some almonds

For lunch I had a tofu and asparagus stir fry, however my tofu didn't quit get all of the water out.  It wasn't terrible but I didn't eat it all. I'm sure if the tofu was right then it would have been great, the rest of the stir fry was delicious. 
for my afternoon snack I had some mini sweet peppers, a carrot, and some pine nut hummus. it was absolutely delicious! but as my boss Stacey so kindly pointed out, requires gum after eating : P
For dinner I had a sun dried tomato and basil veggie burger with half an avocado on an ezekiel bun...i was hungy and forgot to take a picture before a dug in so excuse my bite marks : P
all in all, I had to adapt to some minor glitches today but still a successful day 3!

So today is my husband and I's 2 year anniversary. he had to work all day and I had to go to work as soon as he got home : (  of course a few minutes with each other is more than last year when we didn't see each other at all. well hopefully next year we can get in some more time : P  So anyway, I decided that my anniversary gift to myself would be to relax and do as little as possible.  I cooked my food and did some abs but other than that I relaxed on my couch until I had to go to work.  So here is my food diary for the day.  Breakfast I had my overnight oats with banana and chia seed
It was a different experience eating cold tasted fine, just threw me off a bit.  Then for my mid morning snack I had some sliced strawberries and almonds..mmmmmmm

Then I decided that I would get my workout and cooking in so I could enjoy what I had left of the day.  So I did some abs and had my protein shake.  Then for lunch I had some TVP with chopped portabello mushroom with some low sodium soy sauce and hot sauce, with some baby spinach on the side.  This was my first experience with TVP and I have to admit it wasn't bad!
for my afternoon snack I had some "cream" of asparagus soup.  Wow it was so delicious!!  The recipe called for 2 tsp of hot sauce but I think it could have 1 and be just fine.  Don't get me wrong, I like hot sauce but i felt that much took away from the great flavor of the rest of the soup.

For dinner I had some falafles(spelling? lol)  with a sweet potato and apple mash and some corn. 
well since it's my anniversary I thought I would make something sweet for my 6th meal.  So I made some vegan chocolate chip cookies.  I replaced the cane sugar with beet sugar and used carob chips instead of chocolate chips.  The beet sugar is sweet, but not a sicky sweet like too much sugar.  Very good!
Tomorrow I have some good stuff in store! I'm excited especially for lunch!!  So I've got my food prepped and ready to cook for tomorrow morning to take to work. My day is done, so goodnight all!

Week 1 Day 1

Yesterday I started my 2 week vegan challenge.
It was a hard day to start on considering it was memorial day and we were having a cookout but I did it : )  So here's a small recap.

Started my day with some oatmeal with fresh strawberries and blueberries. 
Now we were super busy cleaning and preparing for people to come over so I did not get my morning snack in, but I had some delicious edemame and quinoa salad for lunch and I added half a peanut butter sandwich on ezekiel grian bread. 
I also didn't get an official workout in yesterday, but I did to a solid leg workout sunday so I guess yesterday was my rest day instead of sunday : ) We had a great time with our friends at the cookout

So for supper I had fruits and veggies along with a grilled portabello mushroom cap with a slice of vegan cheese on ezekial bread.  As a snack later I had a sodelicious coconut milk ice cream sandwich.  So that was how I spent my day 1 of my vegan challenge : )
